Cabbage Rolls


* 1 package of spanish rice
* 1 can white beans (you could use whatever you have on hand)
*8-10 cabbage leaves
*2 cloves garlic
*1 zucchini, diced
* 1 tomato, diced
* 1 onion, diced
* 1/2 cup salsa

Cook the rice according to the directions on the package in water or vegetable broth. Boil cabbage leave in water for 5-10 minutes until soft. Saute the garlic, onion, tomato, and zucchini in olive oil until tender.
In a large bowl, mash the rinsed beans. When cooked, add rice, sauted veggies, and salsa. Scoop the filling into the cabbage leaves and roll tight. Cook at 350 for 30 minutes and enjoy.

Fruit Scones

Looking for a breakfast baked good that isn't loaded with sugar? Look no further....

* 3/4 cup rice flour
* 3/4 cup sorghum flour
* 4 T teff flour
* 2 T baking powder
* 4 tsp xanthan gum
* 2 T agave nectar
* 6 oz butter, room temperature
* 1/2 cup cranberries/blueberries ( I used fresh, but dried would work)
* 2 eggs
* 1/2 cup fat free sour cream
* 1 tsp vanilla extract
* zest of 1 lemon and 1 orange (optional)


Mix dry ingredients. Mix in butter and add fruit. In a seperate bowl, whisk together egg, sour cream, vanilla, and zest. Mix liquid ingredients into the dry mix.
Make a circle about 1 inch in height and cut 8 wedges. Seperate pieces and bake at 450 for 20-22 minutes.

Serve with a drizzle of honey, a scoop of jam and clotted cream, or enjoy plain with a cup of tea/coffee.
